Creamy tahini dressing
This dressing turns any salad, bowl or plate of roasted vegetables into a meal. It thickens, then loosens as you whisk in water — do not worry when it seizes up halfway, that is exactly what tahini is supposed to do.
Preparation
- Whisk the tahini with the lemon juice — the mixture will thicken and stiffen. That is normal.
- Add the garlic, honey and salt.
- Whisk in cold water a spoonful at a time until the dressing is pourable and creamy.
- Taste: more lemon for freshness, more water for a thinner dressing. Keeps 4–5 days in the fridge.
Tip: Swap the water for cold brewed coffee? No — but do try it with orange juice over a winter salad with beetroot.
