Rashi & dibs — the traditional Kurdish breakfast
In Amedi and across Kurdistan and Iraq, this is how generations have started the day: راشي (rashi — tahini) with dibs, a dark syrup of dates or grapes. Sweet, nutty, rich — and made in five minutes. No cooking, just good ingredients.
Preparation
- Spoon the tahini onto a small plate or shallow bowl.
- Pour the date syrup over and around it.
- Swirl once or twice with a spoon — do not mix it completely: the contrast between the nutty tahini and the sweet syrup is the whole point.
- Tear off pieces of warm bread and scoop. That is it.
Tip: The classic ratio is two parts rashi to one part dibs, but every family has its own. Start there and adjust to taste.
