Questions

Where do you buy stone-ground tahini?

Rarely in a supermarket. What stands on those shelves is almost always roller-milled, often with added oil. Stone-ground tahini comes from Middle Eastern grocers or straight from the producer: the Bayaz Tahini Box is a box of 6 jars × 700 g for €49.00, about €11.67 per kilo, shipped from the Netherlands to more than 40 European countries.

What to check on the label

The ingredient list should say one thing: sesame seed, 100%. Added sunflower oil, an emulsifier or sugar all point to a paste that needed help.

Then look for the origin and the milling. Stone-ground, granite millstones, slow milling — producers who work that way put it on the jar, because it costs them more. And weigh up the jar size: small jars look cheap and work out expensive per kilo.

Why stone-ground tastes different

Steel rollers grind fast and heat the paste, which dulls the sesame and darkens the colour. Granite millstones turn slowly and keep the paste cool. The result is lighter, softer in taste, and it whips up far better in hummus.

We mill in Amedi, in the Kurdistan region of Iraq, on the same stones the family has used since 1948. The sesame comes from small farms around the town.

Also good to know

Is tahini expensive?

Per jar it looks like more than the supermarket; per kilo it usually is not. A box works out at about €11.67 per kilo, and the ingredient list has one line.

Can I order a single jar?

We sell by the box of six. Shipping one 700 g jar across Europe costs nearly as much as the jar, which is why the box exists.
